Pork casings (hog casings) are a universal natural casing for cooked and fermented sausages, which remains tender and fully edible after roasting or drying.

The fatend casing features a thicker layer of muscle and fat tissue, which positively affects both the shelf life and the appearance of the cross-section (sausages rarely develop a dark rim under the casing and have better sensory properties, making the product juicier).
